Crafting a Modern Culinary Experience at the Union League

Alluring Ambiance 

Prior to Trumbauer’s historic opening, the Union League already offered four unique dining experiences at the League House. When conceptualizing the new rooftop dining venue, the Club envisioned an elegant and sophisticated space with a high-end chop house feel. This extraordinary dining experience incorporates craft cocktails, wines by the glass, and a simple but delicious menu featuring the freshest ingredients. 

The focal point of the design is the bar itself, which is situated beneath a dramatic skylight atrium that encapsulates the space. Fifteen bar stools direct members’ attention to a beautifully illuminated brass bottle display that maintains an open concept to preserve the view of Center City. A central buddy bar with a gas fireplace accompanies the bar, providing unique seating and socialization opportunities for nights when energy is high and the bar stools are full. 

Flanking the bar area are two distinctive dining spaces. The main dining area is characterized by warm hues, curved leather booths, table seating, and delicately sheer privacy curtains to add ambiance to the space. The Joan Carter Room, named after the Union League’s first female president, is a luxurious private dining area flooded with rich blue tones, opulent fabrics, and adaptable banquette seating that can cater to groups of varying sizes. The double-sided wine display that separates the bar area from private dining adds a beautiful and functional allure to the space. 

Notably, all dining spaces have expansive windows and direct access to the vibrant outdoor terrace, further celebrating the views and rooftop experience. The entire experience is further elevated by careful attention to detail and integration of the Club’s history throughout the space. 

Innovative Offerings 

In the contemporary culinary landscape, the bar experience transcends mere libations; it’s a hub of creativity. Private clubs are redefining the drinking experience by offering more than just conventional beverages. Craft cocktails are taking center stage, with skilled mixologists infusing unique flavors with fresh, local ingredients. This trend creates an immersive experience for members who appreciate the artistry behind their beverages. 

Beyond serving as a visually stunning focal point in a dining space, wine displays also provide an opportunity for temperature-controlled wine storage to ensure a perfect flavor profile with each pour. These are further complemented by wine dispensers that can be nestled into the design of the bar itself, offering consistency and convenience in a vibrant, bustling bar atmosphere. 

The opposite side of the central bar area boasts a unique feature that celebrates the seafood offerings on the new menu—an oyster bar. This element offers an elegant and interactive dining experience. The shucking ritual, combined with the freshness of the sea, adds a touch of sophistication and indulgence to this aspect of the culinary journey. 

Today, many designs for private club kitchens are also exploring the open kitchen concept. This design element allows members to witness the culinary craftsmanship firsthand, where the sizzle of pans and the aroma of fresh ingredients become integral parts of the ambiance and energy of the space. This creates a unique sense of connection between members and the culinary team. 

Finally, technological innovations in kitchen equipment help to not only elevate the culinary offerings but underscore a commitment to providing the best possible experience for members as well. As one example, the new Mibrasa charbroiler at the League House is a welcome addition to the culinary landscape, bringing precision to grilling and adding a distinct smokiness to dishes—just one of the many unique features that impacts Trumbauer’s new menu.  

Delectable Cuisine 

At the center of the Union League’s culinary evolution is the curated menu, newly crafted by the Club’s Chef. In the refined dining ambiance of Trumbauer’s, the menu serves as a canvas for culinary expression, seamlessly blending traditional favorites with innovative dishes. And just as the ambiance of the physical environment changes throughout the day, so too does the menu, contributing to the variety of culinary experiences available to members within one space.  

Trumbauer’s midday menu showcases a delightful array of culinary treasures. From the tantalizing Brick Oven Pizzas, such as the classic Margherita or the savory Butcher Block, to the exquisite on-the-rocks offerings like Oysters and Jumbo Lump Crabmeat, the lunchtime experience provides a symphony of flavors. Small plates like Korean Barbeque Chicken Bites and Meatball Amatriciana offer diverse and vibrant options, while salads like Prosciutto and Burrata are a refreshing interlude.  

As the sun sets, the culinary team transitions to Trumbauer’s enchanting dinner menu. From the tempting Pasta options like Rigatoni or Malfadine to the delectable Brick Oven Pizzas such as Fig and Prosciutto or Sausage and Potato, every dish is a carefully crafted masterpiece. The Small Plates section boasts delicious creations like Mushroom Arancini and Tuna Tartar, while the Wood Fired Charcoal Grill offers prime cuts like Filet Mignon, New York Strip, and Bone-In Rib Eye. Side dishes like Potato Gratin and Sautéed Garlic Spinach serve as perfect accompaniments to the main courses.
